Our youngest absolutely LOVES the Cars movie. We decided to make a Cars racetrack cake for his second birthday.
I baked a carrot cake into two round cake pans. When they were cool, I laid them side by side and cut off a small piece so they fit together (which meant we got to sample it…)
To make the racetrack, I cut two circles of paper to use as a template to leave the inside blank. I spread dark chocolate icing as a road. I used a knife dipped in hot water to smooth it after it was on.
I removed the paper, and filled the centre with green icing for grass. I was going to put it on the sides of the cake, but I often have trouble making the icing stick to the sides.
My 3-year old helped me place the cars on the racetrack. I am so sad that we couldn’t find our actual “Cars” Lighning McQueen….just the no-name knock off. It looked good enough anyways, and our 2-year old loved his cake!
