We love summer here at our house. We change gears from the fast-paced school days to some laid-back summer fun days! One of our favourite day trips is to head out to the beach. We pack a lot of snacks and spend most of the day there. Everyone has a great time and comes home exhausted!
With these laid-back days, we love laid-back meals to go along with it. Meals that are easy to make, very filling, and taste delicious! One of our go-to laid-back meals is Taco Salad. It is so quick to make, and so flexible with the ingredients. Everyone loves it, and nobody complains! 🙂
One of the best parts of Taco Salad is the creamy goodness that comes from Gay Lea Gold Premium Sour Cream. It is so thick and delicious, and really balances out the spiciness of the taco seasoning. It is rich, silky & decadent, nut-free and certified Kosher, and available in Ontario only (we’re so lucky!).
Ingredients:
1 lb ground beef
1/2 package taco seasoning
diced onions & peppers
1/2 head of lettuce, shredded
1 bag tortilla chips
1 tomato, diced
1 cup salsa
1/2 c. grated cheddar cheese
1 c. Gay Lea Gold Premium Sour Cream
1. Brown ground beef along with peppers and onions. Add the taco seasoning according to directions. Set aside.
2. Lightly crush the tortilla chips in the bag. Pour them into a large bowl.
3. Add lettuce, tomato, salsa, cheese and ground beef. Toss to combine.
4. Serve with a dollop of sour cream on top.
Not only is this great for rushed summer suppers, but it also travels well. Perfect for BBQs, and potlucks. You can mix the sour cream right into the salad if you prefer – it tastes great either way! You can substitute ground pork or turkey, or avoid the meat altogether, and add some delicious beans. Let us know what other substitutions you make! We love trying it different ways!

Taco salad is a favourite in our house too. To change it up, I’ll switch the lettuce from Romaine to mixed greens with extra spinach.
I snuck some kale in this time – they didn’t notice! 🙂

We use lots of Gaylea sour cream in dips and heavily butter our corn.
Mmmm we are big taco salad fans here too! So good! I put sour cream on everything and Gay Lea is my favourite one! I think the next thing i’ll use it on will be a nice big baked potato topped with sour cream and chives from the garden!

We love baked potatoes on the BBQ during the summer and smother them with Gay Lea sour cream.
We always have taco salad when we go camping, with Doritoes. We’ll be enjoying it again this weekend -yum!
Have you ever done “Walking Tacos?” You cut a small bag of Doritos open at the side. Put your toppings in the bag, and eat with a fork. Delicious and so easy!
