Lately I’ve really been enjoying my crockpot. Sometimes to cook an entire dish in, other times to cook the chicken for a dish, or to prepare a casserole in the morning and just leave it in the crockpot. I find it’s a really good way to make sure that supper is ready on time, without running around in the kitchen during that busiest time of the day.
Today was one of those days that the afternoon would be the busiest, and I had all kinds of time in the morning. I threw some chicken breasts in around breakfast time, and at lunch they were done. I wanted a different chicken recipe – something I’d never done, so I found some inspiration in Pinterest. Creamy Chicken Spaghetti – lots of versions of this. But I didn’t want the cream soups and cream cheese versions, so I decided to make my own version of Chicken Spaghetti in a crockpot, inspired by this recipe on OurEveryDayDinners.com.
Ingredients
1 pound spaghetti or linguini noodles, prepared according to directions
1 diced onion, 1/2 diced green pepper
2 stalks celery, finely diced
diced garlic to taste
5 Tbsp butter or margarine
1/4 c. flour
2 c. chicken broth
1 c. milk
2 c. shredded cheese
2c. cooked chicken, diced
1 c. salsa
1/2 c. frozen spinach
1. In a large frying pan, cook onions, celery and garlic in a bit of olive oil. Add margarine, and flour, stirring well to melt. Add broth gradually, whisking continually. Add milk and bring to a boil over med. heat until sauce is thick.
2. Add the cheese, chicken, salsa and spinach, stirring well. Season with salt & pepper to taste.
3. Place cooked noodles in crockpot. Pour sauce over top and stir to combine. Top with additional cheese if desired. Cook on low for 3-4 hours.
You could also try all kinds of add-ins, such as frozen corn, black beans, or spicy salsa.

Hello Marya,
This is looks like an awesome recipe! I like the idea of cooking the chicken first, so it can be done low-fat. I tend to dislike cooking chicken in a crockpot because sometimes it gets really greasy (especially thighs). Summer is the perfect time for crockpots, though some people say winter is better. I personally don’t like to cook in the summer, so bring on the crockpot 🙂
I’m Canadian, too – I live in Vancouver. And I’m Christian, too! But we don’t have kids, just a couple of dogs. It’s a pleasure to meet you!
