I needed a quick & easy treat to bring to our church to feed some volunteers for our church’s renovations. I didn’t have much time, and there happened to be a great sale on cake mixes at the store, so I thought I’d search for an easy cake mix recipe. There are a LOT of them out there.This brownie recipe looked simple enough and didn’t need many extra add-ins, which was great, because I was low on groceries.
Her recipe was basically just lessening the amount of ingredients you ned for a cake mix – less water, less eggs and less oil. The result is a dense fudgy brownie which barely resembles the cake it was supposed to be.
You combine one box of cake mix, 1/4c. of oil, one egg, and 1/3 cup of water. Mix well and spread in a greased 9 x 13 pan. She suggested chocolate chips too, but I didn’t have any. Instead, I took about 1/3 cup of peanut butter and dropped spoonfuls on top, then swirled them with a knife. Bake at 350 degrees for about 23 minues and….
