Oven-Roasted Cabbage

I’m a big fan of buying what’s in season, and when I went to the store last week, apparently cabbage was in season! I bought a HUGE head for  $.99 – it was massive! Even after removing a few of the outside leaves, I was left with a lot of cabbage. 
 
I knew we were going to make a lot of coleslaw, and probably some cabbage roll casserole (recipes to come) but I wanted something new, so I thought I’d try the roasted cabbage that everyone’s talking about.
 
It was so easy!  Slice the cabbage, lay it on a cookie sheet.  Brush with olive oil, and sprinkle with salt and pepper.  Some recipes suggest adding garlic or bacon (both of which would be amazing) but I didn’t have either of those on hand. 
 

Bake at 450 degrees for about 25-30 minutes, until it is crispy.  So good, and so easy!  We all loved it – even the kids!

 

 And this only took up a small bit of that head of cabbage!  More recipes to follow!

  2. Now I’m craving cabbage! I met a lady yesterday who told me that her husband asked her to stop trying recipes found on Pinterest. I suggested she ask where he’d get his recipes for the next month, since it’s his turn to cook : )
