One Recipe, 3 Christmas Cookies

I always love recipes that simplify, and make our Christmas preparation easier.  Well, this recipe is for a simple cookie dough that can be modified to make several different cookies.

Ingredients:
1 c. butter                             1/4 c. chocolate chips (mini are best)
1 c. icing sugar                     1/3 c. dried cranberries & 2 Tbsp. walnut crumbs
1 egg                                     1/3 c. red Christmas cherries chopped
1 tsp. vanilla
2 1/4 c. flour
1/4 tsp. salt

 

1. Cream butter & sugar.  My KitchenAid mixer works great for this!

2. Add egg and vanilla.

3.  Add flour and salt.  Mix well.

4.  Divide into 3 parts.  Mix chocolate chips into the first, mix cranberries & walnuts into second, and cherries into the third.

5. Put a chunk onto saran wrap.   Shape/roll into an 8 inch roll, wrap in saran wrap.  Do the same with each.  Chill for 3 hours. (You could also freeze them at this point).

6. Cut thin slices.  Bake on ungreased cookie sheet at 325 degrees for 10 – 15 minutes.

 

I’m sure you could use all kinds of other variations for this – mix in mini M&Ms, put sprinkles on top, dip them in chocolate – really, anything!

 
I love that it gives you a variety of cookies, without all the extra work!
