This no bake Grasshopper Pie isn’t so much a pie, but it’s definitely a very tasty dish. We were headed to a Holiday Monday BBQ and I left myself too little time to make dessert, so I headed straight to my No Bake Treats board on Pinterest.

I used the recipe from A Pretty Life as a starting point and made my own changes from there. The biggest tip that she had was to use Creme de Menthe as the flavouring – brilliant idea! I can never get quite the right mint taste with mint extract. Plus, we have Creme de Menthe syrup, so it gave us the green colour & everything, all in one shot.
I served this dish within 5 hours of making it, but after tasting it the day after, I can say that it definitely ages well. So, absolutely, make & serve the same day if you need a quick dessert, but if you think about it early enough, put it together the day before. It’s to die for.
This would be a perfect dessert to serve in tiny mason jars for easy serving, but unfortunately I didn’t have any of those, so I served in a glass pan. The pudding doesn’t get very firm, so it can be a touch messy to serve, but the folks I served certainly didn’t complain – it was a big hit!


- 1 box of instant vanilla pudding
- 1 2/3 cup cold milk
- 1/3 cup Creme de Menthe syrup
- 1 pgk Dream Whip prepared, or 2 cups whipped cream or Cool Whip.
- 1 1/4 cups chocolate cookie baking crumbs (like Oreo)
- 1/3 cup melted butter
- Beat vanilla pudding powder together with milk & creme de menth in a bowl for about 3-4 minutes, or until thickening. Set aside.
- Combine chocolate cookie crumbs and melted butter, press into the bottom of a 8x8 square baking pan, or a glass pie plate.
- Fold whipped topping into pudding, spread evenly over the cookie crumb base.
- Refrigerate for up to 24 hours before serving (the longer the better).

My brother-in-law makes grasshopper shakes every holiday season. This would be a great addition to the tradition!
