Looking for a light, spring-like treat to accompany this beautiful weather? These lemon squares are perfect for afternoon tea, a baby shower, or just a special treat. They’re easy to make, too, which is great for baking with kids over Spring Break!
Lemon Squares

Yields 16
Ingredients
- 1 c. flour
- 1/2 c. margarine or butter, softened
- 1/4 c. icing sugar
- 2 eggs
- 1 c. sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 Tbsp lemon juice
Instructions
- Preaheat oven to 350. Cream margarine, flour and icing sugar.
- Press into 9 inch pan lined with parchment paper.
- Bake for 20 minutes. Allow to cool in fridge while preparing the rest of the ingredients.
- Combine remaining ingredients and beat until fluffy.
- Pour over crust.
- Bake for about 25 minutes.
- Cool, and cut into 16 squares.

Those look delicious! I’ve tried many different versions of lemon squares, but I’ve never actually made them myself. I may just have to change that with this recipe!
I love lemon squares. They are one of my favorites. My sister-in-law also makes cranberry-lime ones that are divine.

Sometimes I can eat lemon sweet treats and other times I can’t. I prefer berry flavors, but I will eat the crunchy, crispy, crumbly and crusty parts of any treat. I went to the Toronto Zoo and had a blast. My favorite part was seeing the polar bears swim behind this glass panel. It was amazing!
Lemon Squares are perfect snack for Spring & this looks so delicious. The recipe looks pretty good & easy to make. I would love to try this over an weekend.
