MR – I was making chicken caesar salad last night, and realized that I would love to have some croutons in it. I’ve never bought them, just because it never really crosses my mind to do so. Then I remembered a recipe I learned way back in highschool for making your own croutons in the microwave. It’s SO quick, so simple, and once again, I like to be able to control what ingredients go into our food.
Just butter a slice or two of bread (I use homemade from our breadmaker). Cut it into cubes and sprinkle with various herbs (basil, parsley, whatever). Microwave in a bowl for about 45 seconds and stir. Microwave again for about 45 seconds. The bread should be fairly hard by now. Dump onto a plate and allow it to cool for a few minutes, during which it will become even crunchier.
Add to your salad and enjoy!
