We love butter tarts here, but I’m not a big fan of the process involved. My sister-in-law makes wonderful butter tarts at Christmas time, so that’s when we get to enjoy them.
But this Butter Tart Square recipe is a close second. It’s much easier, less prep work, and still tastes great!
Look at that gooey, sticky goodness!
Here’s the recipe:
Butter Tart Squares
Crust:
1 1/2c. flour
2 Tbsp. white sugar
1/2 c. butter
Preheat oven to 350
Combine flour and sugar. Cut in butter until crumbly.
Press into a 9 inch square pan. Bake at 350 for 10 minutes. (see below for a parchment paper baking tip that may change your life!)
Filling:
2 eggs
1 1/2c. brown sugar
1/4c. butter
1 Tbsp. vinegar
1 tsp. flour
1/2 tsp. vanilla
1 c. raisins
Beat eggs and brown sugar until fluffy.
Stir in remaining ingredients. Pour over crust.
Bake at 350 for 20-25 minutes.
Allow to cool for a bit before cutting, and enjoy!
