Fruity Vanilla Icing

Well, the first birthday has come and gone, and my computer is finally working again, so I thought I’d share what I did for the birthday cake.  In the end I decided not to do anything too fancy since we found out with a pre-birthday cake that the little man doesn’t really actually like cake too much…. 

I made up just a plain golden boxed cake, and then whipped together some icing using a generic vanilla icing recipe.  However, My Little Guy’s favourite food at the moment is strawberries, so I replaced all of the milk in the recipe with strawberry puree.  The result was a light, fresh tasting strawberry vanilla icing – the highlight of the otherwise plain cake!  It turned out really deliciously, and I think in the summer I’ll try out a blueberry icing, too!  I imagine that replacing the liquid with a raspberry puree and adding it to a chocolate cake would be really tasty!  Any other combinations you think would work really well?
