Dense & Chewy Brownies

This has been my go-to recipe for brownies over the years, mostly because it’s very easy, and tastes great every time!  It tastes amazing with ice cream, and if  you make it in mini-muffin tins, it tastes like those two-bite brownies!

Ingredients:
6 Tbsp. cocoa
1 c. sugar
1/2 c. flour
1/8 tsp. salt
1/3 c. melted butter
1 egg
1 tsp. vanilla

1. Preheat oven to 350.  In a medium-sized bowl, combine the first 4 ingredients.

2. Add the butter, egg and vanilla.  Mix well.  You’ll get a thick, cookie-like batter.

3. Spread batter into an 8×8 dish lined with parchment paper (see baking tip below) .  You may need to press it into the corners.

4.  Bake for 30-35 minutes.  I find that often takes up to the full 35 minutes, otherwise the centre doesn’t get cooked through.

I’ve also made healthier versions of this in the past, including using whole-wheat flour, and substituting applesauce for the butter.
