Curried Sweet Potato Soup in 15 minutes

Alright. If you’ve been hanging out with us on the blog this month, you’ll know that I won a Harley Pasternak Power Blender from Salton at Blissdom Canada last month. I’ve been having an absolute blast with it, and the honeymoon period is definitely not over yet. Mornings are filled with raw veggie smoothies (so far, a Lime Spinach smoothie is my fave!) while late afternoons are filled with quick & healthy soups for supper. This Curried Sweet Potato Soup can be made without a Power Blender, it’ll just take closer to an hour rather than 15 minutes. (Doesn’t that ALONE make you want to go out and get one?!)

Curried Sweet Potato Soup in 15 minutes!

I’m not usually a curry fan, but I want to expose the kids to things that I don’t like, and I know that my husband is a big fan of curry – so I went with this. I started with a recipe from Foodland Ontario, and made it my own (as I am want to do). I served the soup with spicy Italian meatballs in it (OK, ok: meat loaf. I served the soup with spicy Italian meatloaf in it. I’m too lazy to make meatballs, alright?). The kids took a while to get into the flavour – it was their first time with a curry – but my husband was head over heels for it.

Ingredients
  1. 3 medium sweet potatoes, peeled & chopped in quarters
  2. 2 carrots, washed & cut in half
  3. 1 medium cooking onion, chopped
  4. 2 Tbsp butter
  5. 1 Tbsp minced garlic
  6. 1 Tbsp ginger root
  7. 1/2 tsp cumin
  8. 1/2 tsp coriander
  9. 1/2 tsp turmeric
  10. 1/2 tsp salt
  11. 3 cups Chicken or Vegetable broth
  12. 1 cup coconut milk
  13. 1 Tbsp lime juice
  14. 1-2 tsp Jalepeno Tabasco Sauce (to taste)
Instructions
  1. Heat butter in a skillet over medium heat. Add chopped onions & spices & cook til past translucent.
  2. Add all ingredients to blender starting with liquid, then softer ingredients and then harder ingredients at the top.
  3. Pulse blender several times to start the process, then turn on blender at low speed for a minute, then increase speed to high. Blend for 7 minutes, or until soup is hot & consistency is smooth.
  4. Serve with a dollop of sour cream or some cooked meatballs.
