Chili on a Cornbread Waffle

 Does this not look absolutely amazing?  Chili, cheese, cornbread.  The ultimate fall comfort foods, served together like this?!!

And it really was amazing, believe me.  Everyone in the family loved it, and we’re making it again tonight.  SO good!
 
This recipe can be as simple or complicated as you’d like it.  The original post from Bless This Mess  used canned chili and boxed cornbread mix. 
 
For myself, I always improvise my chili.  Ground beef, onions & peppers, a few cans of tomatoes, some tomato sauce, a can or two of kidney beans, some lentils.  Really, anything tastes great in the crockpot after a long day at work!  Add some spices (chili powder, salt & pepper to taste) and you’re done!
 
For the cornbread waffle, I just headed out to my source of inspiration, Pinterest.  I found a great recipe from RecipeByPhotos that made a very simple cornbread.  I added a bit of extra milk to thin it out.  Put it in the waffle maker 1/3 c. at a time, and that’s it!  I think that a dollop of sour cream would be pretty amazing on top of all this also.

  1. Cornbread in a waffle maker?! I have never heard of that! Love it and am for sure going to try that soon. This whole post makes me hungry and it is only 8:30 🙂
