Boterkoek – Dutch Butter Cake #GayLeaMom

 Being of Dutch background, I  enjoy traditional Dutch foods: pepernoten, speculaas, croquetten, boerenkoel, dropjes, and many others. I love sharing them with our children, and introducing them to different flavours (yes, a salty black licorice is  delicious!).  And so when I had a chance to share a recipe through the #GayLeaMom program, I wanted to choose a great Dutch recipe.  When you hear Gay Lea, you think butter, so what better recipe to share than a Butter Cake, Boterkoek!

Boterkoek - Dutch Butter Cake

It is very similar to shortbread, though it often has almond flavouring added. There are many versions of this traditional Dutch treat out there. Some are closely guarded family secrets, and others have been passed around Dutch circles for years. Most recipes are very similar – flour, egg, almond flavouring, and of course, lots of butter!

It is a very rich cake, best served in small servings, and is not good for the dieting crowd. It goes great with a cup of tea or coffee.

You will need: (see full recipe below)

Gay Lea Unsalted Butter, egg, sugar, salt, white flour, baking powder, and almond flavouring.

Boterkoek - Dutch Butter Cake. Rich, flaky and buttery with a hint of almond.

Cream butter, sugar, egg and almond flavouring. Add flour, salt and baking powder.

Boterkoek - Dutch Butter Cake. Rich, flaky and buttery with a hint of almond.

 Press into parchment-lined pan. Brush with egg and score with a fork.

 Bake at 350 for about 30 minutes.

Cut into 12 pieces.

Ingredients
  1. 2/3 c. unsalted butter, softened
  2. 1 c. sugar
  3. 1/2 tsp. almond flavouring
  4. 1 beaten egg, divided
  5. 1 1/2 c. flour
  6. 1/4 tsp. salt
  7. 1/2 tsp. baking powder
Instructions
  1. Preheat oven to 350. Cream butter, sugar and almond flavouring until fluffy. Add beaten egg, reserving 1 tsp.
  2. Add flour, salt and baking powder. Mix until combined in a solid dough.
  3. Press into parchment-lined 9-inch round baking dish.
  4. Brush with remaining egg. Score with a fork.
  5. Bake at 350 for about 30 minutes until top is golden.
  6. Allow to cool before removing and cutting into 12 portions.
Notes
  1. Note: If using salted butter, omit the added salt.

I live in Bowmanville, and am a mom to four young boys - it can get a little loud in my house. I am a Christian, a part-time French teacher, a piano teacher and former homeschooler. I love finding the best deals, which will come in handy when our boys become hungry teenagers! We just moved to a house with more outdoor space, and I'm still getting used to life in the country (a walk around the block is a lot longer here!).
