Apple Coffe Cake With Crumble Topping and Brown Sugar Glaze

MR – We love the smells and tastes of fall here at our place.  The best smell, I think, is the combination of apples and cinnamon – it fills the entire house and it lasts a long time (much better than those air “fresheners.”)  It reminds me of my mother’s apple pies, apple muffins, and apple sauce when we were young. 

I went apple-picking with the boys last week, and they had such a blast.  Our 2-year old loved that he could even reach all the apples!  He alternately ate bites from three different apples at the same time.

I had to bake for our Bible Study group, so of course, I wanted to make something with those lovely apples.  I found this recipe for Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze.  The pictures looked amazing, and I had all the ingredients on hand.

I made my usual substitutes/changes: cut the amount of sugar by 1/3, add less butter, use at least 1/2 whole wheat flour, increase the amount of apples.

It said to bake for about 35-40 minutes. I baked it for just over a half an hour the night before. Then the morning of, I put it in the oven for another 20 minutes or so, before putting the final glaze on – this way I was able to serve it still warm (but didn’t have to bake the entire thing in the morning).

The result: delicious!  Warm, apple-cinnamon-y, slightly crunchy on top, and very moist.
