I’ve always loved eating freshly baked muffins on Sunday mornings, and I was lucky enough to have a mom who often baked tasty muffins before church. This morning, I decided to make muffins of my own – but, not having my mom’s apple cinnamon muffin recipe on hand, I headed to (where else?) Pinterest to find a recipe.
I came up with this recipe and liked the look of it – though I did make some changes. The recipe calls for 1 c white and 1 c whole wheat flour – I like using some healthier flour when baking, but find whole wheat a little heavy, so I replaced the whole wheat with spelt flour. I also replaced all of the white and brown sugar with Palm Sugar, and omitted (mostly because I forgot) sprinkling sugar on top of the muffins before baking.

They taste super yummy and don’t even hint at being healthy! I’ll keep this recipe filed away to use again.
