Lemon Squares

Looking for a light, spring-like treat to accompany this beautiful weather? These lemon squares are perfect for afternoon tea, a baby shower, or just a special treat.  They’re easy to make, too, which is great for baking with kids over Spring Break!

Write a review
  1. 1 c. flour
  2. 1/2 c. margarine or butter, softened
  3. 1/4 c. icing sugar
  4. 2 eggs
  5. 1 c. sugar
  6. 1/2 tsp. baking powder
  7. 1/4 tsp. salt
  8. 2 Tbsp lemon juice
  1. Preaheat oven to 350. Cream margarine, flour and icing sugar.
  2. Press into 9 inch pan lined with parchment paper.
  3. Bake for 20 minutes. Allow to cool in fridge while preparing the rest of the ingredients.
  4. Combine remaining ingredients and beat until fluffy.
  5. Pour over crust.
  6. Bake for about 25 minutes.
  7. Cool, and cut into 16 squares.

The recipe doubles well, but make sure to bake it in separate pan, so it will bake evenly. They also freeze well. Put them into a freezer-safe container, with layers of wax paper between, to keep a delicious treat on hand in the event of unexpected company.

We’ll be taking these squares as we go visit family this March Break. We’re also planning a trip to the Toronto Zoo and some swimming and skating. Do you have any special family plans coming up?

  5. Sometimes I can eat lemon sweet treats and other times I can’t. I prefer berry flavors, but I will eat the crunchy, crispy, crumbly and crusty parts of any treat. I went to the Toronto Zoo and had a blast. My favorite part was seeing the polar bears swim behind this glass panel. It was amazing!
